Look what I baked today!
This is adapted from Moosewoods Lowfat Favorites
1 1/2 cups flour
1/3 cup baking cocoa
1 teaspoon baking soda
1/2 cup maple syrup (or 1 cup sugar if you want)
1/2 cup cold water or coffee (might be a little more or less, just slowly add until you get a thick batter)
2 teaspoons vanilla extract
2 tablespoons cider vinegar (weird but it ends up tasking great)
preheat oven to 375.
Sift together the dry Ingredients.
In another bowl whisk together the wet Ingredients, except for the vinegar! Then slowly add to the dry, mixing until smooth.
Add the vinegar, and stir quickly until it is distributed evenly though the batter.
Pour the batter into a 8 or 9 inch pan, and bake for 25-30 minutes.
Let cool and enjoy!
This cake is actually even better the day after it's baked
